Skirt Steak Marinade

3 limes – 2 juiced and 1 cut into wedges for serving
2 cloves garlic, minced
1 medium jalapena, small dice
¼ c. Tequila
1T each of salt, cumin, and ground pepper
Marinate steak several hours or longer, then grill.

Marinated Skirt Steak 

2 lbs. Skirt steak
1½ c. oil
¾ c soy sauce
½ c wine vinegar
½ c fresh lemon juice
2T Dijon mustard
1 T pepper
¼ c Worcestershire
1large sprig parsley
1 clove garlic, minced
Place steak in a flat dish.  Combine remaining ingredients and whirl in blender. Pour over beef and refrigerate for 12 to 24 hours, turning occasionally.  Grill or broil until browned on outside and pink inside.  Serve thinly sliced on the diagonal.  Serves 6 to 8.

Very Quick And Easy Crock Pot Chuck Roast

3 lbs. (approx) Chuck roast
2 T A-1 sauce
1 env. dry onion soup mix
2 cans golden mushroom soup
Place chuck roast in a crock pot.  Pour A-1 sauce over beef.  Pour mushroom soup over top and sprinkle with the dry onion soup. (Can place carrots, onions and celery around roast).  Cook on low for 6 – 8 hours.  

Baked Chuck Roast

3 lbs. (approx) Chuck roast
¾ c chili sauce (or ketchup)
3 T flour
1½ T Worcestershire sauce
1 T brown sugar
1 T vinegar
1 teas. salt
½ teas. dry mustard
1 T sugar
1 onion, sliced
2 carrots, cut up
2 sticks celery, cut up
Brown roast in pan or roaster  Mix the sauce. On a piece of foil large enough to completely wrap beef and veggies, spread half of the sauce. Lay beef on sauce and spread top with remaining sauce.  Top with veggies.  Seal meat in foil.  Place in roasting pan and bake at 350 degrees for 2-3 hours, or until done.
